I LOVE Free Stuff!

My favorite UPS driver just stopped by with an unexpected surprise...


Its 4 full size bottles of flavor infused grapeseed oils. A Jalapeno Pepper, Zesty Lemon, Hickory Smoked Grilling and a Basil Pesto! I earned them by selling just $500 worth of Wildtree in my first 20 days as a rep, which I must admit was easy-peasy since it really sells itself!

Since tonight's dinner is already marinating (Lemon Pepper Pork Tenderloin, in case you are just dying to know) - I guess I have until tomorrow to decide which one I will open first.

Have I mentioned how much more fun (and easy) dinnertime is at our house?

From one of my customers...

I received the letter below from a customer.  I love to hear how much others love their Wildtree products, and even more so, I love to hear how they are using their products! I am going to have to try this one for sure.  I should point out that this customer is referring to Wildtree's Garlic Galore seasoning blend.

Thank-you for your e-happy new year card!  We made chili for New Years Eve and I left it in the crock pot thinking I would slow cook it and add the Chipolte chilis later.  However, my husband the Chef Ramsey of a cook, looked in the cupboard and into the green bag you had given me with the two spices, one fetticini power and garlic seasoning. He used the garlic seasoning spice to add to the chili.  Needless to say, we did not add the chilis, it was that good!  everyone raved about how the chili was amazing!  Thank-you for that spice.  You had added it to sour cream at the Boutique, as I remember.  So now add it to your chili!

Perfect Piccata

Chicken Piccata is one of my favorite dishes. It has been for many years. The problem I always had with Chicken Piccata is that to make it almost always required a trip to the store. It seems there would always be at least one ingredient I didn't have...like fresh lemons, or capers, or chicken broth, and I almost never had a bottle of white wine on hand, because I prefer to drink red. Now, I know for some it's not a big deal to have to run to the store to pick up a couple of quick items, but for me, when I have to tote along the littles for a quick trip...it can seem like a rather daunting task.

Enter Wildtree.

Wildtree's Perfect Piccata Sauce is one of my new favorite go-to items. It has all of my ingredients right there in a handy little bottle.  So now, when I crave Piccata like I am today, I can have Piccata, without having to run to the store!

To make it like I do, you will need:

Thin cut chicken breasts
salt and pepper
about a cup of flour
2 eggs, beaten
about a cup of bread crumbs
 1 Tbsp. Wildtree's Zesty Lemon Grapeseed Oil
3/4 cup Wildtree's Perfect Piccata Sauce

Preheat the oven to 350 degrees. Sprinkle the chicken with salt and pepper. First dredge the chicken in flour, then dip it in the egg, then dip it in the bread crumbs (I learned these three steps from my sister).

Heat the grapeseed oil in a saute pan and brown both sides of the chicken breast. Transfer each breast to a baking sheet (I like to line mine with parchment paper...makes cleanup a whole lot easier) and bake them just until the juices run clear. While they are baking, add the Perfect Piccata Sauce to the saute pan and heat while scraping up the bits and pieces of chicken and bread crumbs.  Remove the chicken breasts from the oven and gently dip each one back in the saute pan to coat with sauce.
Now, I like to serve it over a bed a mashed potatoes (which should be no surprise if you read this post). You can also serve it over white rice, pasta...really whatever your preference.  

I also like to add a couple of tablespoons of butter to the sauce, because well, my family loves sauce and the butter just gives us a little extra to spoon over our meal. If you are not a chicken eater - give it a try with veal or even salmon.

Mmmmm...I'm hungry just thinking about it!

Holla for Jalapeno Artichoke Dip!

A few weeks ago I was looking for a dip-like recipe to make for my Mom so she could take it to her weekly MNF gig. (I didn't mention this before, but another awesome thing about Wildtree is that you can search for recipes using the actual Wildtree products you have). So I looked through some of my samples and found

Jalapeno Pepper Blend. So then I went to my website and searched for recipes using Jalapeno Pepper Blend and low and behold, up popped a recipe for Jalapeno Artichoke Dip. I decided to give it a try, and holy cow, did my husband and Mom go nuts for the stuff!  Mom was hands down the hit of the party that night and since then, I can't even tell you how many batches of that dip I have made. Seriously, every holiday event I attended, I took a crockpot of dip along, and everyone L-O-V-E-S it.  The best part is, it is SO simple to make.  Prep time is about 10 minutes and if you chop your artichoke hearts in a food processor like I do, it's even less. 

I'm giving you the recipe so that you can be the hit of the party too!  You'll need:

1 cup mayo
8 oz. sour cream
1 cup each of shredded jack and shredded parmesaen cheeses
2 cans artichoke hearts, drained and chopped

Mix all these ingredients together and heat and serve right from the crockpot (you can use the microwave to heat it too).  I like to serve it with tortilla chips or bread.

So that's it!  Awesome Jalapeno Artichoke Dip. With the 2 tablespoons of blend you get about a medium heat, so if you like it hot, just add a little extra.
